Frequently Asked Questions
This silicone was developed exclusively for the new 28 cm AFJ stainless steel scraper. It does not fit conventional scrapers with a screw.
What is the difference between this silicone and the silicone used in conventional scrapers?
The main difference lies in the resistance, performance, and fit. This AFJ silicone is designed for intensive use and for highly creamy preparations, maintaining its shape even after many batches. The system eliminates the need for nuts, wing nuts, or extra parts, which reduces mechanical failures and facilitates cleaning. In practice, this results in greater productivity, less waste, and a much more uniform and effective scraping.
Can I use this silicone for more liquid preparations or only for creamy desserts?
This silicone mold is designed for creamy preparations, especially those based on condensed milk and heavy cream. Brigadeiros (Brazilian chocolate fudge balls), beijinhos (coconut kisses), thick fillings, and spoon desserts are ideal for this purpose. Excessively liquid preparations, such as pure milk, are not recommended because they do not create adequate lubrication for the system, which can compromise the performance and durability of the mold.
Can silicone withstand intense daily use without deforming or losing effectiveness?
Can silicone withstand intense daily use without deforming or losing effectiveness?
Yes. Silicone is highly durable and designed for daily use in professional pastry making. It maintains the correct flexibility, doesn't deform easily, and continues to scrape evenly even after repeated uses. When used with the correct scraper and with proper preparation, it offers durability, stability, and reliability in daily production.
